Red papaya puree (9 Brix) produced in India. The product is obtained by processing ripe fruits with careful removal of seeds, skin and coarse fibres.
  • Technical parameters: Acidity 0.40–0.60%, pH 3.60–4.50, Bostwick viscosity 10–14 cm.
  • Features: A homogeneous thick puree of an intense orange-red colour without GMOs or foreign impurities.
Supplied in metal drums with an aseptic liner (net weight 210 kg). Shelf life 18 months.

History and interesting facts

Papaya: The «Bread Tree» and the tropical enzyme

  • Etymology and names: The name «papaya» comes from the Caribbean word ababai. The Portuguese called it «fruta de bomba» because of the resemblance of the fruits to cannonballs. Thanks to the aroma of its baked pulp, reminiscent of freshly baked bread, it was nicknamed the «bread tree».
  • Ancient roots: The homeland of papaya is Southern Mexico and Central America. The Maya and the Aztecs considered it a sacred «tree of health». In the 16th century the Spaniards brought it to Asia. Today India and Thailand are the world leaders in puree production.
  • A biological paradox: Papaya is not a tree but a giant perennial grass. Its trunk is hollow and has no growth rings, and it grows at a rate of up to 5-10 metres in a couple of years. The fruits can weigh up to 7 kg.
  • The enzymatic power of papain: It contains the enzyme papain, which effectively breaks down proteins. It is used in medicine and as the most powerful natural meat tenderizer.
  • Vitamin concentrate: Papaya pulp surpasses carrots in vitamin A content and contains more vitamin C than an orange. It is an ideal base for sports nutrition and wellness smoothies.
  • Global geography and harvest: Papaya bears fruit all year round, which guarantees uninterrupted supplies of fresh raw material. We supply puree of the Red Lady and Solo varieties with a rich colour and delicate aroma.
  • Black pepper from seeds (Rare fact): Papaya seeds have a pungent taste reminiscent of black pepper. They are dried and used as a spice with powerful antiparasitic action.
  • A living plaster (Rare fact): In the tropics, the juice of unripe papaya is used as a «liquid plaster». On contact with a wound it coagulates, forming a protective antiseptic film.
  • Product history: Industrial production began in the 1970s in Brazil. Modern aseptic lines allow us to supply puree with a stable pH level and a preserved vitamin profile.
