Concentrated cherry puree (29 Brix) produced in Bulgaria. Made from ripe fruits of the «sour» cherry, which has a pronounced varietal aroma and a characteristic light-red color. Technical parameters: * Energy value: 77 kcal (322 kJ) per 100 g of product. * Safety and purity: 100% natural raw material without GMOs. Aseptic filling guarantees microbiological purity (pathogenic bacteria level ≤ 10 cfu/g). * Long-term storage: Thanks to the processing technology, the product retains its properties for 24 months at temperatures not exceeding +20°C. * Application: Optimal for the production of fruit fillings, yogurts, ice cream and premium confectionery fillings. Supplied in metal drums weighing about 220 kg.

History and interesting facts

Cherry: The Energy of Antiquity and the «Blood» of the Plant World

  • Etymology and roots: The name of the cherry in many languages (it. ciliegia, fr. cerise, sp. cereza, eng. cherry) goes back to the Latin cerasus, derived from the Greek kerasos. The fruit received this name in honor of the city of Kerasus in Asia Minor.
  • Homeland and the triumph of Lucullus: The traditional homeland of the cherry is considered to be the territory of ancient Persia. It entered the Roman Empire as a precious military trophy of the commander Lucullus. Cherries reached the European countries along with the Romans, and later the orchards of France, the Netherlands and Poland laid the foundation of the modern variety palette.
  • Botanical status and flowering: From a scientific point of view, the cherry is not a berry but a drupe of the Rosaceae family. Its closest relatives are almond, peach, plum and apricot. An amazing feature of the plant: in spring, cherry flowering begins earlier than the first leaves appear.
  • Sakura — a symbol of beauty: Japanese sakura is a direct subspecies of the cherry. Despite its inedible fruits, its flowering has become a global cultural phenomenon, gathering millions of tourists every year. For many peoples of the world, the blooming cherry is a symbol of love, beauty and renewal.
  • Natural pharmacy and recovery: Cherry is a unique natural antibiotic. Its juice is recognized as a «champion» in muscle recovery after exercise and is a rare source of natural melatonin (the «sleep hormone»). In folk medicine, it has been valued for centuries as a powerful anti-inflammatory remedy.
  • Swiss traditions and «dry heat»: In Switzerland, cherry pits were never thrown away. They were used as a filler for hot water bottles: the pit has phenomenal heat capacity and is able to emit soft «dry heat» for hours.
  • World statistics and leaders: The global cherry harvest in 2025 amounted to about 2.0 million tonnes. Turkey is the undisputed leader (736,791 tonnes in 2023). The top 5 also includes Chile (465,348 t), the USA (321,420 t), Uzbekistan (218,867 t) and Iran (144,877 t).
  • Industrial standard: Poland is a key player in the «sour» cherry segment, where up to 75% of the entire harvest goes to deep processing. In Europe, more than 300 cultivated varieties of this drupe are grown.
  • Product history (1944-1950): Modern technologies for concentrating cherry juice began to develop actively in 1944. In the 1950s, the method of low-temperature vacuum evaporation was perfected in Germany, which made it possible to preserve the finest aromatic fractions of the berry.
  • The «invisible ink» effect: Cherry anthocyanins are sensitive to the level of acidity (pH). In ancient times, concentrated cherry juice was used as sympathetic ink: the text became visible only when the paper was treated with an alkaline solution.
