History and interesting facts

Onion: The «King of Vegetables» and a Symbol of Eternity

  • Etymology of the name: The English word onion comes from the Old French oignon, which goes back to the Latin unio. In German (Zwiebel) and Spanish (cebolla) the names preserve the same Latin root. The Latin name Allium goes back to the Celtic all — «burning», «pungent».
  • Sacred symbol of Egypt: The ancient Egyptians deified the onion, considering its concentric rings a symbol of eternity. Onions were placed in the tombs of pharaohs and used for solemn oaths. Mentions of onions are found in the Bible and on Sumerian tablets.
  • Global geography: Onions are grown in 175 countries around the world — more than the number of countries producing wheat. Its popularity is explained by its undemanding nature and irreplaceability in world cuisine.
  • The secret of «onion tears»: The burning is caused by the lachrymator gas. Upon contact with the eye mucosa, it turns into a weak sulfuric acid. To avoid tears, it is recommended to cool the onion or moisten the knife with cold water.
  • Boosting morale: Alexander the Great introduced onions into the army's mandatory diet, believing that they protect soldiers from diseases and increase their courage.
  • A natural shield and quercetin: Onion is a source of phytoncides and quercetin. This antioxidant protects the heart and strengthens blood vessels. In industry, onion puree is valued as a functional additive that enriches the product with nutrients.
  • Global geography and harvest: We ensure the supply of raw materials during the harvest period in the Netherlands, Spain and Russia (August – October). Modern technologies allow us to supply processed puree with stable organoleptic properties year-round.
  • Onion as currency (Rare fact): In medieval Europe, onions were used to pay rent and ransom prisoners. There is a known case of a French knight being ransomed for just eight onions.
  • History of the product: Industrial puree production developed in the 1970s. Deaeration technology made it possible to neutralize the pungent odor of sulfur compounds while preserving the benefits of phytoncides.
  • Aromatic marker (Rare fact): The smell of onion is used in the gas industry: odorants based on mercaptans (the smell of rotten onion) are added to natural gas so that a person can instantly detect a leak.
