Zucchini: Hypoallergenic Champion and “Flower of the Sun”
Etymology of the Name: In Europe the vegetable is known as zucchini (Italian, also used in English, German and Spanish) or courgette (French) — both names translate as “little pumpkin” and go back to the Latin cucurbita, “gourd”.
Mexican Roots: The homeland of zucchini is Central America. For millennia, the Indians of Mexico used only the seeds for food, considering the watery pulp a by-product.
The European Journey: Zucchini came to Europe in the 16th century. For almost 300 years it was grown in botanical gardens solely for its beautiful yellow flowers. Unripe fruits began to be used in cooking only in the 18th century in Italy.
The Delicacy Flower: Zucchini flowers are considered an exquisite dish: they are stuffed with cheese and deep-fried. The aroma of a blooming zucchini field is recognized as one of the freshest in the plant world.
Champion of Lightness: Zucchini consists of 95% water and is the lowest-calorie vegetable. Thanks to the absence of aggressive acids, zucchini puree is an ideal standard for the first complementary food of babies.
